Interestingly, sushi was originally a South-East Asian method for storing and preserving fish in salted and fermented rice so it could be eaten later.
The rice would be thrown away and only the preserved fish would be eaten! We are grateful that over time sushi as we know it evolved and to this day is still a favourite in Australia.
